As a writer who's been called out for endangering beloved characters, I think the best way to put it is that it's not that we enjoy putting our protagonists in danger--it's that we enjoy seeing our protags overcome these dangers. It's that we love seeing our characters beat long odds and come out stronger for it. Thistle is such an excellent character, and like you, these confrontations leave me craving the day when she surpasses Gwendolyn's abuse and gaslighting.
