Yeah, you should try Flatout Ulitmate Carnage.
What started out as a ode to Norther European Folk Racing, became one of the most carthatic gaming experiences out there, with its combination of vehicle destruction, environmental destruction, and rag doll physics. It features everything from races, to destruction derbys, and even stunt games, using your rag dolling character as a strategic bullet.
My only recommendations is to at least start out with the game's Carnage Mode rather than "Flatout" career mode. It's much faster paced, gives a better introduction to the game's strengths, and is much more casual fun.

This game isn't backwards compatible with Xbox and it makes me so sad I was hoping to play it years ago
