I think the video does a pretty good job of summing up why people like it so much: a warts and all look at production, the same way the video is a warts and all look at the Studio.

I feel like ending on "it's never coming back you shouldn't ever want it back" is both 100% correct and a pretty downer note to wrap up on. If you are giving your opinion at the end, why do you think this theme park attraction is now "the crown jewel" of Nickelodeon nostalgia like you say? Is it deserved?
