Hey bro, I was thinking the same thing. After looking a little closer, I believe he is using his Index finger, the one that is gripping the pic on the top, to pull the string to get that snapping effect. I tried it and it works very well, feels comfortable, and doesn't disturb the way I'm holding the pic. Hope it helps!

The string 5, fret 5 e in bar 5 of example 1) It's key to really selling the phrase and I can't get really all that close. I see you on the neck pick up and the rest of the one feels like some subdued treble. I'm really snapping that string pulling up with the forward part of the pick titled up and that's what gets me closest.. is there anything you describe about that attack that can help here.
