So, about Araragi turning into a vampire every day in Nadeko's case: at the end of Otori, we can see his objective is to exorcise her. After that, in Koi, there's a line where Gahara tells Kaiki he goes to the shrine almost every day, trying to fight her, always powered-up, obviously. He did it so much that after some time Nadeko got fed up with him and started appearing only once every five or so days. She never killed him because of her promisse to Hitagi and it's not like he was even a real threat, anyway.
And with that we have Araragi reexperiencing his worst nightmare: turning into a vampire once again.
He always describes that spring break as living hell and now it is coming back for him, but this time there's no master to kill to turn him back.

During the Nadeko stuff Araragi relied on his healing factor too much because he went to visit Nadeko every day and every time he went up to the shrine she nearly killed him (they mentioned that a couple of times), that's what Ononoki meant by saying he's using his vampire powers too much, What she said was supposed to be a wake-up call to Araragi that he's taking on too much responsibility as Tsukihi said in the last episode. Now he's actually facing consequences for it.
