For any version of Riddle to realize that somebody else will always be more important to them, than their own immortality, is probably the most significant character development there can be. A mere crush or fondness for him wouldn't have been enough to deter her, so her feelings should run far deeper. Considering she's only known Harry for a year, and regularly interacted with him for just the latter half of the year, it does seem a bit too fast. Though I suppose you could argue that she has had no truly genuine relationships other than him.... Well, I'll be looking forward to seeing if or when she finally acts on it.
