Hainanese Chicken Rice may not be gourmet but it's the way it is prepared that makes a difference to how delicious it is. Not many places are able to cook their chicken meat just nice and juicy and the skin soft, firm and jelly-like at the same time. And there is a lot of effort put in to make it. I have heard and seen some videos of the chef when cooking the chicken, dips it in the slow-boiling broth and then taken out after a few min and dip in ice cold water and then repeating the process until it is cooked till just right. Those chef arm strength definitely stronger then people who carry weights I'm telling you since they do it almost everyday to sell at their food stalls. Most places only boil the chicken at a slow boil and take it out once cooked so there is a difference to those places to really good ones. Oh and since I live in Singapore I've had many Hainanese Chicken rice from many food shops and some are just so good and are famous that it is hard for others to be compared with.

Stuff chicken wing is a thing Thai, and japanese have there own style but it takes long time to prep

There's a thai dish that is like what Yukihira's cooking. I think the place near me called it angel wings or something. Very delicious with sweet chili sauce or the peanut sauce they have.

17:01 To your point Michelle, even though Hainanese chicken is not super gourmet, Eizan's dish is because they're using a rare type of chicken called Satsuma chicken which has a very refined flavor.
