The real reason why Luffy heals so easy is because Oda has just written in to the story that Luffy can essentially recover insanely fast as long as he eats meat. Nothing logical about, but that will happen many times throughout the story. Could also argued some sort of rubber capability allows him to do it as well, but who knows on that.

A logical explanation would be because Luffy is rubber. When you puncture a tire, there are holes but it is not entirely open after the cause of the puncture is removed and it kinda goes back to it's original shape with small opening. However, Luffy is still a human being and can heal so he may be healing at a higher rate than normal human thanks to his fruit. Luffy still bleeds from wounds but he just heals faster because his skin kinda closes back up from his stretchiness.

One Piece characters are just ridiculously tanky, like that's literally the simplest explanation. Luffy is definitely still hurt from that injury but he's just enduring it until he can eat again. Same with Zoro, if you recall Zoro also got "shot" by Kaku in Iceburg's office and now he's pretty much fine too. In Alabasta (Vivi's kingdom) Usopp got cracked in the face by a 4-ton baseball bat and broke his skull, and then shortly got back up and kept fighting. Pell survived a nuke. Mostly everyone just tanks damage until eventually they get some food and Chopper heals them.

to answer your question with luffys healing - blunt force will in most cases be shrugged off by him as he is rubber , but as like rubber he is susceptible to cuts and piercing , but the reason he seems to heal so rapidly is part that the body of humans in one piece is a lot stronger than normal and another valid reason but its a big part of his identity later on and will be a major spoil for you guys but rest assured its not solely plot armor

My understanding when I was at this point of the story is that Luffy gets hurt when he's stabbed and when he's also hit with blunt force objects; it just doesn't hurt as much because he's rubber and he's also durable and bounces back from what we've seen so far :)

Perhaps with Luffy sandwiched between the buildings, there was enough pressure on his wound from the wall that he was able to heal. There are some other reasons but it's spoilery. I will say I think Oda likely had a change of plans after Luffy got stabbed and regretted going that far, but there are some loose ways of explaining it with future knowledge

About Luffy's wounds. Don't think about it too much. Nothing is really confirmed as of yet. What we do know is that cut and piercing type attacks does damage Luffy but this isn't the "realistic" type of world like you said Ron. Also the deal with Nico Robin is to trade her life for the Straw Hats, so I wouldn't be surprised if it looked a lot worse then it was.

when it comes to luffy being pierced in my mind his rubber works like a slow bike puncture while at the same time he body would being to heal the wound - since the rubber would stretch back and act as a sort of tourniquet so no need for stiches and would automatically limit the loss of blood etc

Ron, you’ve seen by now that Luffy can be super strong in situations where he is motivated to be, such as boss fights or when in this episode where the motivation to save robin, he breaks the building. In the same light, Luffy has already shown that he can take lots of damage and can heal up pretty fast. This healing is even quicker when he eats meat or food, which is likely why Nami makes a request for lots of food.
