The episode, while not canon, provides great crew interaction, story related elements, and just hilarious in general. I think it'd be a shame to skip this episode.

In the manga Ace already left after he wiped Crocodile's underlings so all these weird shots and interactions are anime added stuff which I personally find very weird and unfit to his character. Also next two episodes are complete fillers.

Someone else already said this but part of the desert is filler that is why there is a little extra ace content in the anime.
