2024-05-11 08:34:36 +0000 UTCi'm at 20:21 and going to make a prediction. The best cuts you can go for for flavor are things like skirt steak and oxtail. They're cheap and insanely flavorful, but they're tough, similarly you can go for more budget cuts like rump roast or beef shoulder but they tend to be slightly leaner. Things we'd do in the restaurant is cook oxtail for like eternity, with the bone, with the marrow. The meat becomes super tender, and the marrow caramelizes and turns into basically butter, which you can incorporate into a sauce or something. For the leaner cheap cuts, there's a fatty membrane called caul fat, which you can wrap around lean cuts as like a sheath. The fat renders as the meat cooks, saturating it in rich fat, softening the meat and makes the flavor slightly more complex. If i had to guess, and if I were doing the challenge, I'd make an oxtail don. not only would it look beautiful on the plate, but properly cooked oxtail dissolves in your mouth just like wagyu and you can scoop the marrow right out of the bone. That's my prediction. Edit. Shit i'm wrong, oxtail would be dope though. Worth menttioning you want fresh, raw onions. The proteolytic enzyme in onions is denatured with heat, so you probably want to leave the onions on the steak for 1-3 hours, and the smaller the dice the better Another edit: proteolytic just means it eats protein

2024-05-11 06:01:53 +0000 UTCGoddamn it i'm doing it again. If you guys don't grow your own tomatoes, you literally don't even know what tomatoes taste like. I'm that serious. So ripe tomatoes that fall off the vine on their own are bruised so easily that they can't be shipped, so they get plucked while they're green, get shipped to their destination, and then they bathe them with ethylene gas to force "ripen" them. really they're just force-rotting them, because it's accelerating their degeneration which makes them red. It's the same reason why if you put bananas in a paper bag they rot faster, because they give off ethylene gas. Anyway, tomatoes are super easy to grow. just put them by a door, wait til the fruit turns red, and give it a gentle tug every morning. When they pop off easily, take bite, the juiciest sweetest thing you've ever had. I literally just make tomato sandwiches - slice the tomato, salt, fine black pepper, a little mayo and some hot sauce on white bread. There's a quote from the movie burnt that I love - "It was God who created oysters and apples, and you can't improve on recipes like that. But it is our job to try" Freaking love that quote. So beautiful and so true. Sometimes perfection arises naturally. If you're insecure you'll try to be too clever and wind up hiding the beauty that's already there. Anyway I'm just gushing about tomatoes. Grow em, you won't regret it
