2024-06-15 06:01:47 +0000 UTCOkay so first I wanna say I called apple risotto but also not bragging because i don't think it's really impressive? I guess because they're japanese? But like my brain immediately went to risotto because -> rice and apple? oh risotto can be sweet and savory and it needs a lot of liquid so I can use apple juice instead of broth to hydrate the rice (this isn't special, anyone who's worked in a restaurant has made 25 different kinds of risotto. I made a brisket risotto using the rendered juices, fermented plum risotto which used the blended plums and some of the brine. I've made a freaking pickle risotto. It's all the same -> you take arborio rice, toast it dry, hydrate in phases with [LIQUID OF CHOICE], add in diced [INGREDIENT OF CHOICE], and when the starch and liquid starts to form a sauce and the rice is tender, you're done. Add a dollop of creme fraiche to mix in and stop the cooking, plate it up and garnish with some contrasting color related to the ingredient (in suma's case i would have julienned some red and green apple peels to make like a little confetti). That's literally my third date trick lol, I'll find out what their favorite food is and then have them over and hit them with a freaking pumpkin spice risotto and it's always way more impressing than it deserves to be xD
