If you go back to Season 1, it was mentioned that Byakuya and the others landed on a small island near mainland Japan. Remember the Russian astronaut couple left that island to travel to the mainland (where Kohaku and their descendants eventually lived) in search of medicine for the sick Asian astronaut? Since Japan has four seasons, including winter, it's reasonable to assume the area they settled in would have snow and ice at certain times of the year. So it's likely that ice was a natural part of their environment, and knowledge of it would have been passed down through generations. However, because there was no glass on the island, Byakuya couldn’t teach them what glass was. So, when the descendants eventually encountered glass, they mistook it for ice.

Also knowledge gets passed down from generation to generation so even if they haven't seen it they'll know about a decent amount of natural stuff
