There is 3 storylines for fate stay/night adapted in anime : fate , unlimited blade works and heaven's feel (trilogy of films). Each storylines has its ways, characters development and ends. Also each routes has its heroin (saber for fate, rin for UBW and sakura for HF). If you want to know more about all characters you should watch all the animes. Also there are more fate's series but in different timelines and universes (like marvel or final fantasy), It's the case for fate's apocrypha, there is not really sequel to fate/stay night.

2020-07-29 19:09:37 +0000 UTCI haven't watched it but from my understanding Fate/Apocrypha is disconnected from the this and zero's story line. If you want more Sakura look to the Heaven's Feel movies.
