I like where you are going with the bear. He directly interacts with the authority figures in the narrative and is essential to the plot. Also, his interraction with the lead character is doctor and patient and really humanizes the main character. That's who I would go with. You have also hinted tiger knight is from a noble family, which could open an avenue into interacting with the nobles' society in general. Since the lead was originally an orphan, being thrust into dealings in high society could promote the development of his character due to the complexity of the situations. I think that is a pretty solid choice as well.
