Each process has it's advantages and disadvantages and I think it's good to know a variety of ways to achieve a similar result. It may seem like a sphere isn't enough to show everything that goes into the rendering process, but it really is just the same thing over and over and it's also the simplest way to to demonstrate every part of it. There's a lot more to each painting as far as what textures to use, what edges to use where, color choice, etc. but the actual process of painting is exactly as you see it in these videos.
