It's worth noting that during season 1 arc against elsa, when subaru asked emelia if she had a secret weapon, she said she did but that it'd kill everyone present but her. Now you know. She pretty much exclusively uses spirit magic because she cannot control her own, but her own is deadly as hell.

Crunchyroll makes it kinda difficult to find the first one but it's under the director's cut tab inbetween ep 6 and 7 as cannoically that's when the ova takes place. It picks up right after the whole mabeast forest situation + Rem and Ram's backstory and just before Subaru and Emilia's argument in the capital. It's not a big deal that you watched it out of order as frozen bond mostly touched on Emilia's backstory. This show can be very confusing but i've been enjoying your theorizing and reactions overall, keep up the great content! ๐

Memory Snow explains some of your questions in scenes in the present since it takes place the day before those scenes. Her cold tolerance is also covered in the other OVA. To find the first OVA, in other languages than the Portuguese version, go to the Director's Cut under the seasons and look for the episode that is EX instead of an episode number. Emilia's past is expanded upon in Season 2 and will answer many of your questions from this OVA about her, her abilities, and the frozen statues in the forest, so I will refrain from giving you answers to a lot of those since they are spoilers. But after seeing all this, you should understand how much Subaru's words mean to Emilia since he sees her as "just Emilia". As for your theory about there being other Witches and what not, you'll learn if your theory is right or not in season 2.

Can t wait for next season, Did you watched the Re zero in 8 minutes we recommended? I think you will like it.
