Unfortunately, the answers to some of your questions here were in cut content from season 1 during Arc 2 during his first week at the mansion and Arc 3 during all the stuff with the return to the capital and everything after that. Long story short, almost all of Subaru's interactions with Satella were cut from season 1 leaving her as much more of a mystery in the anime than she actually is to novel readers. This episode is, however, the first time Subaru has seen her face in both the anime and the novels.
