Today though, i am not fighting bacon splatter but illness, and making one of the family's fave dishes when we're all feeling under the weather. Kei is usually the cook of the house, but my grandmother taught me this recipe when i was young and its at Kei's request i cook this today..... its a hug in a bowl alright!
Its basically beef stewed in hearty veggies. In Wales, we would traditionally use beef in a dish like this but would typically contain beef broth and root veggies - turnip, Swede, spuds, carrots, parsnips, leek, onions, potatoes ect...... but, finding a swede out here is neigh on impossible! So what i did was improvise with what was available to me. That's the joy of this sort of one pot cooking, you're not restricted to what you do with it.
But the method remains the same. Season and coat trimmed slow cook beef in cornflour salt and pepper, brown in a pan. Add diced onions until soft. Stock. Veg. Et viola!
- if using swede be sure to scoop the white foam from the top of the pot as it cooks or it turns the stew sour!!
I recorded this last week when we were all feeling icky and have to say the day after is when i started to feel better. Nutrient overload lol
Is it just me that finds food can literally make you feel better when feeling run down or is it me? Also, do you have a go-to food when you're on the edge?!? I'd love to know xx
