One, the fact that everyone keeps referring to Carmy as "working class" bothered me a lot until I realized that in America, a small business owner is functionally indistinguishable from self-employed working class. The difference between a restaurant owner and an Uber driver is the amount of debt. Two, I was once a regular lurker on /r/kitchenconfidential and the "why do you do this" question was usually answered by "I literally have a mental illness". One poster said, "it's the only job where you can swear, do drugs and handle knives". The anxiety is not just the result, it's also the cause of it, keeping kitchen workers in an addiction-like cycle.

THANK YOU FOR THIS!!! I remember watching the newest season and feeling underwhelmed, but I couldn't understand why. I was chatting about it with some friends and all of us agreed that we each connected very strongly with the first season but felt "meh" by this last one. All of us grew up low income and worked these crappy low paying jobs most of our lives. I related to Carmy because I'm probably going to end up "socially mobile" and am in a high stress career, but I found myself not "getting" him by this past season. Your video just made it all click in my head, always love when that happens. As usual, excellent video and looking forward to the next one!
